One day I will learn to go grocery shopping before the cabinets get down to the bare minimum and the fridge is completely scarce, but today is not that day (obviously). Let me clarify, we have a lot of canned foods and even more pasta in the cupboards, but we're creatures of habit and stick to eating things like chicken wings, breakfast at any given point in the day and Chinese food like Sushi and Broccoli Stir Fry.
When we run out of our tried and true favorites, I consider that running out of food (even though it's really not). Because I hate going grocery shopping, I will get creative and come up with some pretty impressive dishes like this just to avoid it. Luckily, I wanted pizza and since we always have a can of pasta sauce, flour tortillas and shredded cheese on hand, I decided to make my own.
There are many different ways to cook your pizza, but I chose the fastest route of using my cast iron skillet (please note that regular skillets work just as well). If you prefer, you can bake it at 350 degrees and follow the instructions below. If you don't have a stove/oven, you can always make a quesadilla pizza by adding a tortilla to the top and using a table top grill (like the George Foreman grill or even a waffle iron). These are also really quick and easy to put together for a makeshift gathering like an impromptu Superbowl party. Also, this is a fun recipe for young kiddos to help out with.
Not only is it extremely easy to make, but it's ready in less than 5 minutes and they're so flippin' good! Be warned because this was an instant hit in our house.
Quick and Easy Tortilla Pizza

Ingredients
- Flour Tortillas
- Marinara Sauce
- Shredded Mozzarella Cheese
- Toppings
Instructions
Heat the tortilla over low-medium heat on the skillet until it's warm. The tortilla may produce a bubble which is normal. Simply deflate it with the tip of a knife or fork.Add a generous amount of shredded cheese and toppings to the tortilla and allow the cheese to partially melt.Once the cheese is mostly melted, spread a generous amount of pasta sauce over the top with a spoon and allow it to cook until the cheese is completely melted.Add another layer of cheese on top and let it melt. Top with basil and serve.

PS - If you're using a cast iron skillet, the bottom of the tortilla may be blackened, but it shouldn't taste burnt... unless you really burned it.
