I've been working on this dessert option for the past 3 months. Not to toot my own horn (beep beep), but I make some pretty dang good Baked Peach Cobbler! So I definitely wanted the single serve version to live up to the same standards.
Peach Cobbler and my Famous Mac and Cheese are the top 2 requested dishes I have ever made. I found a few Peach Cobbler in a Mug recipes on Pinterest, and was sincerely not impressed because the crust was not up to par (and everyone knows the crust is the best part). So, I had to make my own version to make it match what my taste bud were accustomed to.
I will warn you, you may want to take a nap after you eat this because this is the type of recipe that speaks to your soul, and you might also be tempted to make it over and over- which is normal, but I don't suggest it.
Here's what you will need to make Peach Cobbler in a Mug:
Ingredients
-1/3 Cup Pancake mix
-1/3 Cup packed brown sugar
-1/2 teaspoon ground cinnamon
-1/4 teaspoon ground nutmeg
-2 Tablespoons of melted butter
-1/3 Cup packed brown sugar
-1/2 teaspoon ground cinnamon
-1/4 teaspoon ground nutmeg
-2 Tablespoons of melted butter
-1 cup of diced peaches, with the juice
-1/4 teaspoon vanilla
- 1/2 teaspoon sugar
Instructions
- In an ungreased mug, blend pancake mix, brown sugar, cinnamon, nutmeg and melted butter together until crumbly.
- Mix peach slices with the juice, vanilla and sugar (add a dash of cinnamon and nutmeg for extra flavor). Then pour the peach mixture with the juice over the crust.
- Microwave on High for 2 minutes, it's normal for the crust to rise.

- Allow the cobbler to cool for 2-3 minutes before serving.
- Top with Ice Cream. (Makes 2 servings)
Wow, this is so yummy. It's very very rich, way better then I thought it'd be. I made it gluten-free by using gluten-free pancake mix. It took about 5 mins sitting after microwaving for the crust to finish cooking. Thank you for this recipe! Yum!
